Flavour and description
A larger grain, softer spice profile, similar to European rye malts. Bred in Australia by the University of Sydney, Vampire ryecorn is a forage variety selectively bred to improve leaf production and mature later than common ryecorn, therefore offering greater biomass during a longer growing season. This improved productivity makes Vampire ryecorn an excellent choice for graziers, however, the typical larger grain size has been favoured by both brewers and distillers looking for a softer, European style rye character.
