Valley Malt · Flavour and use
A Polish variety that made its way here about 10 years ago. The variety is named for Poland’s Dankow region. It is Rye at its best with deep bread aroma and high extract. This varietal is not only a regenerative crop for local farms but also a distinct ingredient from the Northeast. Can be used to create award winning traditional Rye ales as well as in a small percentage in dark lagers, IPAs, or other beers where you are building a unique flavor profile with a rich mouthfeel.
